Quick and easy Cilantro Lime Shrimp!

I am NOT a fan of cilantro, let me make that clear from the start.  I cannot stand it.

So when the hubby decided that was the main ingredient for the meal he got to pick for the week I was horrified.  He decided on Cilantro Lime Shrimp.

Now, while I don't care for cilantro, I love shrimp.  And cilantro can be done in small amounts for me so here is how the girls and I got through Cilantro Lime Shrimp night (barely).


Cilantro Lime Shrimp:

Shrimp (the amount will depend on how you will be using the Shrimp)
Fresh Limes (2)
Fresh Cilantro
Butter

De-vein and clean your shrimp, if needed.
Grill the shrimp up in the butter (use just just enough butter to cover the bottom of your pan).
Remove the shrimp to a bowl when they are cooked through.
Roll your limes against the counter hard to loosen up the juices.
Slice the limes and squeeze the juice over the shrimp.
Cut up the cilantro and place in the bowl with the shrimp and lime juice.
Toss.

Ta da!

We put ours over garlic and butter pasta, but you can place it over lime rice as well, or make yummy shrimp tacos from it.

The whole meal takes under 15 minutes to make in total.
