Tonight we went for oven BBQ chicken. I am not sure that was the safest meal to go for, but I did it anyway.
With Audrey in arm I made a lovely little dinner. But before we did that we looked over what we had and planned for the next few days.
Sunday: Hot Dogs and corn grill out style! Kid friendly all around
Monday: Pizza, straight up homemade from scratch pizza (I will totally post this one for you)
Tuesday: Spaghetti and sausage (in my house this is kid friendly)
My next few days leading up to Thanksgiving are all kiddo friendly around here. Why? Well, Thanksgiving isn't Ky friendly, she hates potatoes, turkey, gravy, stuffing, and basically everything else on the menu...ugh.
Tonight? We had oven BBQ chicken with black beans, green beans, and corn bread.
Oven BBQ Chicken:
You will need
Chicken (I used breasts...don't), preferably dark meat with the skin on, it holds and cooks better
BBQ sauce (I like Sweet Baby Rays)
Oven and a cast iron skillet
Preheat the oven to 375.
Brown your chicken on both sides in the cast iron skillet.
Transfer to another pan if you would like.
Brush BBQ sauce on the chicken and place in the oven for about 15-20 minutes until a nice glaze has formed.
After 15-20 minutes add another coating of BBQ sauce and bake for 20 more minutes.
Check the temperature of the chicken, it will be done at 165 degrees. NO COOLER.
