Pub Style Fish

I love fish & chips, I have since I was a kid.  Most kids do, right?  But somehow, I only love them when we go out to eat.  Making them at home never quite works out.  I can bread and pan fry an amazing fillet, but deep fry and have it look like the ones in the restaurants?  No.  I just can't do it.

Until the other day...
I didn't take a photo of it, but I swear it looked JUST LIKE THIS



Ky turned 8.  She got to choose dinner.  She chose fish & chips.  Crap!  Ok, ok, I can do this.  Google, don't fail me now...it did.

Then...

I remembered using pancake batter to make onion rings once!  Eureka!  Ok, so I have that, I have beer...oh wait.  No, hubby drank that.  Ok, I have batter.

Well, I used pancake batter to batter the fish...AMAZING!  Brilliant!  The fish was perfect, the fries?  those I jacked up, but that is a whole different post...

Pub style fish for fish & chips:

Cod or Tilapia
Pancake batter
Water
a lot of oil for frying, or just use a deep fryer
lemon

Mix equal parts pancake mix and water to form a thin batter.
I cut my fish in half to make long strips versus a butterflied fillet (I used tilapia) 
Dip your fish in the batter and place into the deep fryer until golden brown.  Hubby found that removing the basket made it a lot easier.
Remove the fish and place on a paper towel to absorb extra oil.
Garnish with lemon and enjoy!

*You can also use beer instead of water for a beer battered fish!!!
